He has been working with speciality coffee for about four years thanks to Nomad Coffee. The first thing he learned was how to make cold brew, then he became a Barista. Some of you might think what is cold brew? Simply coffee infused in cold. “Since it was the first thing I learned, it impressed me from the beginning. Even today, I am still discovering new things about coffee”.

We had coffee with Xavier over at Nomad Coffee and we talked for a while. Enjoy his cosmos!

What would you like to be when you grow up?

X: I think I’m already older… but I would like to have free time to listen to music and do sports in nature.

What’s the best thing about an ordinary day?

X: mmm… what to say? Coming home after work and enjoying what is left of the day.

What’s the funniest thing you’ve ever done?

X: It’s hard to say one thing. But travelling, playing with my niece… I remember having a lot of fun going to waterparks when I was a kid.

What’s your favourite star?

X: I don’t know a lot of them, but I would say my favourite one is the Pole star so I don’t lose my north!

What would your ideal planet be like?

X: Uranus, for being the seventh planet in the solar system.

What food do you order on your birthday?

X: Pasta with any sauce. Bolognese and pesto they always win.

What have you learned from your children?

X: I don’t have children, but I’ve learned from my niece to look at everyday things with surprise.

What is the secret for preparing coffee at home?

X: Good coffee and patience to prepare. Coffee is a lot more than just a drink you prepare quickly in order to wake up.

The Japanese have their tea ceremony, full of aesthetics, philosophy and culture. How is ours, that of coffee?

X: Very easy! Let’s learn how to prepare a liter of cold brew at home! The ingredients are good roasted filter coffee; bottled or filtered water; and time. For 1l cold brew: use a large bowl (3l) to mix 100g of coarse grind size coffee with 1.75l of bottled/filtered water. Stir well so that all the coffee is wet. Let it rest between 16 and 22 hours. Filter so you don’t have any sediments and put it in the fridge. It is the most natural energy drink in the world!
